Beat the cold weather with a warm serving of this Kale and White Bean Stew recipe...


2 tablespoons of olive oil

650g pound of sausages  or chorizo (casings removed for all)

2 onions

4 cloves of garlic

450g pound kale leaves

800g of chopped tomatoes

1 1/4 teaspoons of salt

1/2 teaspoon of fresh-ground black pepper

800g of rinsed cannellini beans

Step By Step

1. Heat 1 tablespoon of the olive oil over moderate heat. Add in the sausage meat and hastily break it up with the help of a fork before it cooks. Allow to simmer for 2 minutes.

2. Add the second tablespoon of oil to the pan and stir in the chopped onions.  Cook for a further 3 minutes until the onions have softened.

3. Incorporate garlic and kale to the pan and cook for another 2 minutes. Stir in the tomatoes, salt and pepper and let simmer by reducing the heat. Let simmer, on a gentle heat, for another 10-15 minutes until the kale has softened.

4. Stir the beans into your stew and cook for a further 5 minutes whilst mashing up a few beans to thicken the sauce.
